I would convert/export to PhotoJPG. But you should test what runs the best on your system. I can play AIC pretty well too - if I had fast computer I would use ProRes. Also HAP and DXV work good. Read what H264 codec means to understand the benefits or reasons to use it
At the time I bought M8 it was the best running live video app. I looked into VDMX as well, but found its learning curve intimidating. Resolume was for PC only I think.

I have great experience with Matrox MXO2 mini with analog (S-Video) and HDMI capture. Latency is even acceptable for lip-sync. I think 8bit 4.2.2 uncompressed is the most usable. BTW Modul8 performs better than Quicktime(and Isadora) with this device.
read up DVD authoring. DVD is fixed size and you can put only that amount of time/quality on it. 4.7gb is about 1.5hours material. It has nothing to do with the codec you record your movie. When converting the stuff for DVD the time is the major factor..
Live camera work is not something you do on your lappy. Hire proper hardware and people if you are serious. Usually there is a operator who does live mixing on dedicated hardware before you add effects(on Modul8 or other).

The best would be to use external recording device. There are good but somewhat expensive options to record HDMI. Much cheaper would be to film the screen/space you project on.
