I'm trying to figure out a cheap + compact way to get S-video out of MBP. I'm wondering if this would work:
Mini display port to VGA adapter (the apple one) then:
VGA to DVI-A adapter then:
The apple DVI to video adapter (which has s-video+ video composite out)
any ideas?

That will not work. You need a scan converter.

Choose a non explosive scan converter for best results,

Some explosive ones can be really good if you synch the explosion with the end of your performance. It creates a grand finale difficult to beat using just video. Make sure to charge the promoter for the explosive scan converter though.

What about a consumer dvd recorders? Most have hdmi inputs and analog outputs and they go pretty cheap on e bay.

You really should put the trauma of the exploding scan converter behind you.
A scan converter is more compact and cheaper than a dvd recorder and is exactly the item you need to do what you need to achieve.
Maplins sell them for sub £30 which work pretty well.
