It is not so a problem of cameras but a problem of video inputs.
The right question is : how many video input I have my Mac ?
Depending on the Mac model.
Upgrading a Mac Pro with a BMD Decklink Extreme and a BMD Decklink Duo, or a QuadCapture gives you 3 video independent video inputs.
The new macBook Pro Retina can handle (with his 2 thunderbolt ports) 2 video inputs.
I never use IP cameras or Usb cameras, it works when it works and you ll got a huge delay on your video output process.
