Working on a new project that will make use of 5.1 surround sound audio tracks.

What is the current status of 5.1 surround sound support within MadMapper?

I read through the documentation and also looked through the settings and saw that MM does support these audio codecs "- Audio: MP3, WAV, AIF AAC M4A AC3 WMA FLAC OGG"

From my research I can see that at least AC3 and AAC can support 5.1 surround sound information.

Assuming the content is up to spec how does MM handle this and what configurations are needed to ensure quality playback?

Once configured are there any options I can adjust such as per channel volume, on/off, etc?

Further, can anyone recommend a quality sound interface for use with 5.1 surround sound audio?

From my brief research on audio interfaces I can see that the MOTU UltraLite Mk5 can do this perhaps.

Make sure the selected audio output device has the right number of channels.
On Windows, you'll have to select the ASIO audio driver type in MadMapper audio preferences, in order to benefit from more than two channels. Which also means your audio device's drivers must be ASIO compatible, which seems to be the case with the UltraLite-mk5.

Once the audio output is setup, you can either import a video-file with 5.1 audio embedded or load an 5.1 audio-file in an Audio Player module.

About the format, any format should do.
Personnaly I mostly use either wav, aac or aif.

Unfortunately we did not go down this path for this project but in the future I will surely consult these guidelines and tips.
