I can be wrong but I guess that it's due to your beamer's matrix resolution. 800x600 is a low res, you'll get better result with higher beamer resolution. a HD beamer would project a higher resolution calibration patterns.

The goal is to have the view from the projector, pixel by pixel.
So if you have a 800x600 projector your image will be the same.

But here you have a lot of noize as well.
Try to change the adjustment of your camera to don't have a image underexposed.
(I guess your projector is probably not powerful)
Try to move the axis of your camera, it's not needed to have the camera in the same axis of the projector, sometime 45 degrees will make better results.

thx for your support but the result for me is the same ...

I try to used a beamer with 7000 lumens and a resolution of 1024*768.

I have change the adjustment with no overexposed or underexposed image.

    Shutter a less than 1/60 ....

I move axis of my camera at 45° ....

and I have always a lot of noise .....

I've try a lot of different settings...

According to my tests, the results might be better if your camera shoot is under-exposed.
use ISO 100, this will prevent noise.

for a tutorial, using a crappy 300 lumen projector, a Canon 500D, and very bad conditions: it works nicely:

the artifacts are due to the white surface, being way too reflective. However, on the dwarf, the picture is OK.

When I look at your image carefully, I barely recognize a pencil and two porcelain cups (highly reflective). If I'm correct, you seem to be too close to your subject, and if you're shooting 2 cups and a pencil with a 7000lumen, there will be too much reflection.
