What Mac Pro to buy ?

For a live performance in december 2016, the plan is to use modul8HD & Madmapper with 3 projectors 1920x1200, i am not sure what tech spec the Mac Pro i'll buy should have ?
The idea is having max ram = 64GB and D700 graphics processor, does it really makes sense to buy the real big machine with 12core processor, or will 6core be enough ?
Also, as i understand, the data rate spit out from the SSD flash drive is important, i can't find out the data rate of the SSD flash storage in latest Mac Pro, any idea where i find this ?
