I have an Enttec OpenDMX to send DMX out to a set of Par Cans. I also have an Enttec Pixel Octo to send DMX out to a LED Pixel string via ArtNet. It looks as if there is only drop down option for DMX output destination.

Is it possible to use both DMX via USB and DMX via ArtNet or is it one or the other?

You can route ArtNet to USB DMX output device using the DMX Router module. Check the documentation from menu Help
