I was wondering if I could use AJA HA5-4k like a datapath fx.

I need to have 8 outputs.

Would 2 AJA work on madmapper? On 4k hdmi outputs

Of course. It will appear as a single display in your system. But in MadMapper you'll be able to choose to use it as a single display, or to decompose it in four quads, so assigning 4 MadMapper projector to each 2x2 splits of the display.
