As using MM in a permanent nightclub setup, it would be nice for a way to connect to MM and control the program when not being able to stand at the projection machine

You can, using OSC messages over a network. Most things in madmapper can be controlled with OSC (or MIDI), including cues.
That network could be wifi, or it could be over an ethernet cable (patch cable, or joined using a switch) when the source is another computer.
There are iOS apps that can send OSC messages, like TouchOSC, over wifi.
